I’m a busy lady, with a hungry boyfriend and two demanding children. I need to make meals that are quick, filling and low in Smart Points. With Christmas fast approaching, I am yet to purchase any cookbooks so all I have to work with is my imagination and my Weight Watchers app (which has been a godsend).That’s how I made this delicious concoction in just under 20 minutes.
The whole recipe is 18 smart points and serves two, making it 9 smart points per serving.
Firstly, ignore the fact that it’s pasta. This is spelt pasta and it’s wonderful. Normal pasta hurts my tummy (I think I may have a mild wheat allergy) so I’m always looking for alternatives. This is from Tesco and the packet looks like this
These are the other ingredients you will be needing:
500g Tomata passata
300g vegetable base mix
120g can of no drain tuna
I understand base mix isn’t universal, here’s a visual for you in case it’s called something else somewhere else:
Heat the passata in a big pan and throw in the vegetable base mix. In my pan it took about 20 mins for it all to be cooked thoroughly but I have the unpredictable mix of a great big pan and a weird old fashioned electric hob that is pretty temperamental, so just keep an eye on yours. While this is going on, throw 150g of pasta into a pan of boiling water. It takes about 10 minutes, it plays by all the regular pasta rules.
Drain your tuna and put it in the sauce right at the end and add a splash of Worcester sauce. Stir it in for a minute or two whilst you drain your pasta. I always rinse mine with boiling water straight from the kettle. I don’t know if that’s how seasoned pasta cookers do it, but I find it somehow makes it better.
Then you’re done! Dish it up and enjoy it, safe in the knowledge you can probably find enough smart points elsewhere in your day to have a small pudding! Yippee!
